Recommend a PC RPG for me

I've got Fable on my laptop (macbook) and from memory you can save it at anytime.

You probably can't play Oblivion on your lappy unless its an Alienware laptop or you stop by oldblivion.com and get a some programs will circumvent some graphical crashes. (they've got people that have run it on a macbook which isn't ideal at all for such a graphics intensive game).

More or less, yeah. When you start a quest, your full "world save" option goes away and is replaced with a "hero save," which saves items and such but not your game progress. If you do a "hero save" during a mission and restart, you'll have to restart the mission from the beginning. Outside of quests, you can save wherever you want. I don't know what kind of stuff your laptop has in it, but the game was developed on the XBox, so it shouldn't be too demanding.
