The wife and I have been enjoying some three card poker at the local casino now and then over the past few months.
I’m tempted to sign up for one of these online casinos to play, but a) that could lead to problems and b) even if I got ahead, how much of a hassle is it to cash out, and would I even do it or would I just give it back eventually?
When we play live, there’s a defined start and end time. And getting your cash is 20 steps away at the cashier window.

I go back and forth. It's definitely too easy to play and get sucked in but the odds for the games I play are generally WAY better than they are in the real casinos.
It's pretty easy to cash out except that if you take one of those huge welcome bonuses you have to play it through a bunch of times before you can cash it out. Outside of the bonuses cashing out is super easy, you can link your online banking and get an ACH within a day or two. No real hoops to jump through or anything, if you win too much (over $1200 in one hand I think) they'll want a picture of your ID before paying for tax purposes but that's the exact same rules as in a physical casino.
You can set limits though, you can limit how much you are allowed to deposit per day, week, month, etc and/or how much you can wager per day or how many hours. They call them "Responsible Gaming" limits.
I'd say try it just to get one of the big sign-up bonuses and then if you're really worried about it set the "Responsible Gaming" limits right after you make your first deposit so you can't just keep dumping money in or play too long.
