Skeptics can be forgiven for doubting that the new MGM Grand Detroit restaurants would prove to be real dining destinations.

After nine years of lackluster casino dining experiences, most restaurant-goers had written them off for their largely uninspired food, inadequately trained servers and closed-in settings with tired décor.

But these newcomers didn't turn out that way.

All three -- the fine-dining SaltWater, the indulgent Bourbon Steak and the casually upscale Wolfgang Puck Grille -- opened strong in October and have only improved.

But of the three, SaltWater -- created by San Francisco star chef Michael Mina -- is in a class by itself.
